REMINDERS

  • Hilhof Dairy Bottles- Please be sure when you return the bottles that the cap with the label on is still attached_ If you lost the cap, tape your name to the outside of the bottle or put your name paper and put it in the bottle. You will get two dollars credit for every bottle that comes back so long as we can tell it is your bottle.
  • The Market closes for online ordering on Mondays at 10pm. We harvest for those orders on Tuesdays and Wednesdays. Our farmers come together Thursdays to pack, sort all the orders, (THURSDAYS ARE BUSY). Your freshly harvested items are delivered Thursday and Friday. Pick up days are Thursday through Sunday depending on the location.

Almars is finally into more variety of apples available. The extra help has arrived to sort and bag these tasty delights.


They need two more weeks to cure before we can sell them

Wait and watch the weather, will we have frost, will the soil temperatures get too cold, is the season long enough to give us big potatoes (and some small ones). Dale has already started to dig the sweet potatoes and they are looking good. After the sweet potatoes are harvested we need another two weeks of cure time. This helps to toughen and dry out the skins so that they will last longer in storage.
This weekend is the big weekend to finish digging them. If anyone wants to venture to White Pine Farm on Friday Morning to help with the harvesting of this crop they are more than welcome to come out. Please “White Pine Farm”"mailto:whitepineorganicfarm@gmail.com first before coming to the farm.

STRAWBERRIES Pre- orders are being taken at Green EArth Grocery for orders to be picked up there – check with them for the price – 810-658-5305.
Orders to be picked up at Whetham Organic farm need to come by email to Pat , Price is $44 per 8 qt flat for the ones picked up at Whetham Organic Farm.

These berries are certified organic from Ware Farm in Bear Lake MI.

Great Lakes Fish Is now available, Lake Char also know as Lake Trout and Lake White Fish. The Lake char is from Upper Huron Lake.

Chicken From GCC is back and Grahams will also be processing chickens and those should be available by June 25.

Veggie Burgers, these are made in Michigan in Leelanau County, they are made with Michigan’s very own Organic Black beans and contain other organic ingredients.

Hilhof Dairy HILHOFF ORDER DEADLINE Has been extended, it now is the same as the markets deadline. This week we will have the freshest possible milk available. It is still good and I have found even after a month the milk has been fantastic. Please be sure when you return the bottles that the cap with the label on is still attached. We have gotten some bottles back with no label. Your label is how we determine who to give credit to.

The Lake Char was absolutely delish!! I made with mayo/mustard slather with crumbs on top, because, you know, sometimes you don’t really want to taste the fish. WRONGO! Next time, it’ll be just some light seasoning and a quick saute, and YUM!! Thanks! for bringing it into the mix! Pat Gall

I ordered the white fish this time and pan seared it with just celtic salt and a smidge of pepper. Boy, was it mild and not stinky and just a real treat for our Sunday dinner.

Market News

Creek Fest in Ortonville, we will be having a booth in front of For the Love of Local during this event. This event is also the grand opening for the store. If anyone would like to help out at the booth during this wonderfull event please email me.

Delivery Van, the van has been fixed so we are back in business. The other ugly old faithful is still on the road Koleine Law from Law family farm and Kristie Tollis has stepped up and is helping with Friday delivery, Kristi Tiberg someone who has been helping at White Pine Farm is going to help with some paperwork (payment documentation) over the weekends, her son Jeremy will be helping out through the week. Anita who loves going to farmers market had a family emergency which will be detaining her this summer so I (Marian) have been going to the market. After much lack of sleep trying to keep up with everything I’m grateful for Koleine and Kristi’s willingness to help. When things get crazy we have a hard time getting back to everyone with questions.

Kitchen Update We have a license. Steve our inspector moved into our neighborhood so since he passes our location on a daily basis he gave us a surprise visit and inspection. We passed. We are still waiting to find time to install the stove and exhaust hood, that will be after all the planting is done
. In order for the market to operate and for the farmers to process some of their own products we have to have both a licensed kitchen and a licensed warehouse. MDA couldn’t decide how to categorize us since we are online so those are the requirements they came up with for us to operate. _We have been grateful to have been able to use the a mobile kitchen from MOFFA (Michigan Organic Farm & Food Alliance) for the last few years. They are a great organization and they are donating the trailer to the MSU Student Organic Farm. _

Walk In Freezer Update Walk In Freezer Fundraiser Update <———- We have raised about $1,300.00 so far!

THANK-YOU! The freezer currently needs a compressor, rubber roof and door trim. The temperature in the freezer will be much lower than standard commercial freezers. The people who have contributor so far are listed on the left side of the weblog. (We will be updating everything soon as we find we have time to struggle through the numbers and figure it out, the funds are set aside in a saving account (probably earning less than 1% interest.)

The walk in freezer is our largest expense that we will be facing and we need all the help we can get on it. All proceeds collected here are going to the walk in freezer fund. We do have a ways to go before we have enough to fix the freezer.

May 28, 2015 Growing Season Update


The sweet potatoes are planted at White Pine Farm.
Peas are starting to be harvested, the asparagus is done for the year and more lettuce will be available soon. Even though we had a very dry spring the rains are making up for it. The hay after being cut got rained on fortunately we had a couple of dry days so after raking it was dry enough to put in round bales

Garlic Scape Recipes

On the east coast garlic scapes are in demand, in our area not many of us know what to do with them.
Here are a few suggestions.

Garlic Scape Pesto

Appetizer-Snack
Cook time: 45 minutes
Servings: 8

Ingredients

  • 10 garlic scapes, finely chopped
  • 1/2 cups finely grated Parmesan Reggiano
  • 1/3 cup cup toasted pine nuts (for a variation use black walnuts)
  • 6 Basil leaves
  • 1/2 cup olive oil
  • Sea salt
  • Squeeze of fresh lemon juice
    Directions
    • Put the scapes, cheese, pine nuts, Basil and half the olive oil in the bowl of a food processor (or use a blender or a mortar and pestle). Whir to chop and blend all the ingredients and then add the remainder of the oil. If you like the texture, stop; if you’d like it a little thinner, add some more oil. Season with salt. If you’re not going to use the pesto immediately, press a piece of plastic against the surface to keep it from oxidizing. The pesto can be stored in the refrigerator for a couple of days or packed airtight and frozen for a couple of months.
      Garlic Scape Dressing
      Ingredients
      • 2 garlic scapes, coarsely chopped
      • 2 green onions, coarsely chopped
      • 1 teaspoon honey
      • 2 teaspoons Dijon mustard or similar brown mustard
      • 4 tablespoons red wine vinegar
      • 1 tablespoon lemon juice
      • dash salt
      • 1/8 teaspoon fresh ground black pepper
      • 1/2 cup extra virgin olive oil
      Preparation
      In a blender, combine the garlic scapes, onions, honey, mustard, red wine vinegar, lemon juice, salt, and pepper. Blend until smooth. With blender on low, slowly add the olive oil until well blended.
      Makes 1 cup.

The Great Scape (Grilled Scapes)
Ingredients

1 bunch scapes
extra virgin olive oil
sea salt
Directions
1.Preheat grill to medium high.
2. Pick through scapes and discard any that are mushy or dried out. Cut off tough ends (as you would with asparagus). Rinse and dry.
3. Drizzle with olive oil and toss to coat. Sprinkle with salt.
4. Place scapes on grill and spread out evenly (be careful they don’t fall through!). Close lid and cook for about 3-4 minutes, until they are slightly charred underneath. Flip scapes and continue cooking on the other side until evenly cooked – they should be slightly crunchy still, but not raw!
5. Remove from grill, season to taste (lemon juice is yummy too) and serve.
Optional: Make a dressing out of olive oil, fresh lemon juice, maple syrup and a pinch of sea salt, whisk together. Toss large leaves of radicchio, or other bitter lettuce with dressing, and place grilled scapes on top.

Scape Soup

Ingredients

  • 3 cups garlic scapes, cut into 2-inch pieces
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon thyme leaves or 1?2 teaspoon dried thyme
  • 3 cups chicken broth
  • 1 cup cream
  • salt and pepper
    Directions
    Saute the garlic scapes and onion in olive oil over medium heat until soft. Add the thyme at the end.
  • In food processor puree the vegetables and add chicken stock as needed to make a smooth paste.
  • In saucepan heat the vegetable mixture and add remaining chicken broth.
  • Bring to a simmer and add the cream.
  • Season as needed.

Pickled Garlic Scapes

These are easy “refrigerator pickles,” which means they require no heat processing but must be kept in the fridge.

Ingredients

  • About 15 garlic scapes
  • 1 dried chile (optional)
  • 1 cup cider vinegar
  • 4 teaspoons fine sea salt
  • 4 teaspoons sugar
    Preparation
  • Trim the garlic scapes, curl them up, and place them in a pint jar with a tight fitting lid.
  • Work the chile, if you’re using it, into the jar with the garlic scapes.
  • In a small saucepan heat the vinegar, salt, and sugar with 1 cup of water until simmering and salt and sugar are dissolved.
  • Pour the warm vinegar mixture over the garlic scapes to cover them (you may not use all of the vinegar mixture). Seal the jar. Let it sit until cool, then store it in the refrigerator for at least 6 weeks and up to six months.
